ornamental grasses

I have a Zebra plant in my front garden plus other grasses - they are tall and they have turned a beige colour and look dead - but I see new green shoots at the bottom of the plants - NOW.....

Do I cut the old growth out or leave it till the new growth is established and half grown??

Any ideas please.... thanks
